  • 2 cups oats
  • 1/2 cup honey
  • 1/2 cup melted coconut oil
  • 2 tbsp walnuts, roughly chopped
  • 2 tbsp slithered almonds
  • 2 tbsp chia seeds
  • 2 tbsp sultanas
  • 2 tbsp cranberries
  • 2 tbsp pumpkin seeds
  • 2 eggs
  • 8 dates, pitted

  • Preheat oven to 170C and line a square cake tin with baking paper.
  • In a large mixing bowl place oats, honey, melted coconut oil, walnuts, almonds, chia, sultanas, cranberries and pumpkin seeds.
  • In a food processor add eggs and dates, mix until well combined and dates are roughly chopped. Add to bowl with other ingredients.
  • Mix all ingredients until well combined.
  • Place mixture into lined baking tray, press mixture down so it is firmly in the tin.
  • Bake for 20-25 minutes.
  • Remove from oven and allow to completely cool before removing from the tin (this will avoid it crumbling apart).
  • Cut into 10 bars, store in an airtight container in fridge for 7 days.
  • Makes: 10 bars
  • Calories per bar: 225
