Sarah has always loved making banana bread and she decided to create a healthy recipe for banana cake. Give this delicious reader recipe a go and see what you think.
INGREDIENTS
- 1/2 cup coconut oil
- 1/2 cup coconut sugar
- 2 eggs
- 2-3 very ripe bananas
- 1 & 1/2 cups wholemeal plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
METHOD
- Preheat oven to 180C.
- Place coconut oil and sugar in bowl of a mixer add eggs and mashed bananas mix until well combined.
- Mix flour, baking powder and salt in small bowl then add to banana mixture mix and add vanilla while mixing, until well combined.
- Mixture will be thick. Pour into loaf pan sprayed with cooking spray and bake for 60 minutes or until a skewer comes out clean.
Makes 12 serves. 139 calories per serve.
