Robbyn has sent in this great recipe for coconut oat clusters with a chocolate twist. Make a batch to have on hand when you need healthy snacks for you and your family.

INGREDIENTS

  • 1/4 cup light milk
  • 1/4 cup cacao/cocoa
  • 1 cup coconut sugar
  • 1/4 cup coconut oil
  • 1 & 1/2 cups rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 tsp vanilla

METHOD

  • In a saucepan, heat milk, cocoa, sugar, coconut oil and vanilla until combined.
  • Combine coconut and oats in a mixing bowl. Add cocoa mixture to the dry ingredients. Mix together until all ingredients are combined.
  • Using a tablespoon to measure, place mixture on baking paper and form into clusters.
  • Leave to cool and then place in the fridge.

Makes 15 serves. Approximately 191 per serve.
