A big thank you to Sarah Kennedy for sending in this delicious healthy eating salad that is perfect if you are trying to lose your pregnancy weight or trying to eat more healthy foods

  • 6 or more medium sweet potatoes
  • 1 butternut pumpkin
  • A large handful of rocket
  • Basil, mint or another soft leaved herb
  • Olive oil-in spray form and in a bottle
  • Black pepper, coarsely ground
  • Half a tsp salt
  • Dried herbs
  • One cup almonds or cashews-roasted under grill on tray for 1-2 mins

Spray oil two trays. Peel and slice sweet potato and pumpkin into 1 cm slices- spray with oil and sprinkle with dried herbs. Roast 40mins or until edges begin to be dark brown. Let cool. (This can be done the night before if you wish, and just stored in a container in the fridge).
Make a pesto by blending your fresh herbs with ¼ cup or so olive oil, black pepper, salt.
In a large salad bowl add- the sweet potato and pumpkin, the rocket, nuts. Gently stir through your homemade pesto, and toss well. Husband approved and can be adjusted for babies and toddlers. (Blend a few spoonful’s with boiled water for baby to a smooth consistence.)
