Today we have a great recipe for a rich and hearty soup, which is perfect for a quick lunch. Of course, you could have it for dinner as well!
This recipe makes one serve – why not double it and keep another portion in the fridge for the next day.
Red, ripe tomatoes and capsicums are packed full of antioxidants, and they are naturally low in fat, calories, salt and sugar.
The addition of garlic not only boosts the flavour, it can also help to boost your immunity during cold and flu season.

Ingredients:
  • 4 large tomatoes, chopped
  • 1 large red capsicum, chopped
  • 1 small brown onion, peeled and chopped
  • 2 cloves garlic, sliced
  • 1 tbsp basil leaves, torn
  • 2 tbsp low-fat cottage cheese, to serve
  • 1 slice wholemeal mountain bread, toasted, to serve
Directions:
  • Preheat the oven to 180C.
  • Combine tomato, capsicum, onion and garlic in a baking dish.
  • Cover with foil and roast for about 30 minutes until vegetables are soft.
  • Blend the vegetables and transfer to a saucepan to re-heat.
  • Serve with basil, cottage cheese and the toasted bread.

Serves: 1. Calories per serve: 251.
