Ingredients
- 1 cup macadamias
- 1 cup frozen raspberries
- 8 dates soaked in hot water for 10 mins
- 1/2 cup of cashews
- 1 cup desiccated coconut, for rolling
- 1 tbsp coconut oil melted
- 2 tbsp brown rice malt syrup
- 2 tsp of vanilla essence
- 8 squares of dark chocolate, melted

Method
- Blitz the cashews in the blender to form a paste, and then add all other ingredients (except desiccated coconut and chocolate) to the blender.
- Whizz for around 8 mins. Scrape the sides of the blender with a spatula if needed.
- Place the mixture into the fridge for 10 mins to chill.
- Use your hands (or a melon baller if you have one) to make bite sized balls.
- Roll the balls in the desiccated coconut and then drizzle with the melted chocolate.
- Makes 52 balls when using a melon baller, and this is 55 calories per ball.
