Ingredients 

  • 1 cup macadamias
  • 1 cup frozen raspberries
  • 8 dates soaked in hot water for 10 mins
  • 1/2 cup of cashews
  • 1 cup desiccated coconut, for rolling
  • 1 tbsp coconut oil melted
  • 2 tbsp brown rice malt syrup
  • 2 tsp of vanilla essence
  • 8 squares of dark chocolate, melted

Method

  • Blitz the cashews in the blender to form a paste, and then add all other ingredients (except desiccated coconut and chocolate) to the blender.
  • Whizz for around 8 mins. Scrape the sides of the blender with a spatula if needed.
  • Place the mixture into the fridge for 10 mins to chill.
  • Use your hands (or a melon baller if you have one) to make bite sized balls.
  • Roll the balls in the desiccated coconut and then drizzle with the melted chocolate.
  • Makes 52 balls when using a melon baller, and this is 55 calories per ball.
