When you are trying to lose baby weight most diets will tell you that cookies are best avoided.
But for us living a healthy and sustainable life style is all about balance.
Which means moderation and healthy swaps. You can lose weight and still eat the foods you love.
And we LOVE these Raw Coconut Seed Cookies!
Packed full of raw goodness – and only 82 calories per cookie – these are sure to be a hit with the whole family!

Ingredients

  • ½ cup pepitas
  •  ½ cup sunflower seeds
  • ½ cup dates (either Medjool dates or pitted dates. If using Medjool dates, be sure to de-seed them first, if using pitted dates you will need to soak them in boiling water for 5 minutes to soften them before you use them, then drain water from them).
  • 4 tablespoons desiccated coconut
  • ½ teaspoon vanilla extract
  • 2 tablespoons rice malt syrup
  • 1 tablespoon unrefined coconut oil
  • 100 grams dark chocolate (I use 70% cocoa) for dipping

Method

1. If you are using pitted dates, add to a bowl of boiling water for 5 minutes. If using Medjool, remove seeds.
2. While the dates are soaking, add pepitas and sunflower seeds into bender/food processor and blitz. (You want the pieces to be small but not ground into a fine powder).
3. Add dates to seed mix – drain water if your dates were soaking
4. Add coconut, vanilla extract, rice malt syrup and coconut oil and blitz all together. You may need to stop blending to scrap down the sides of the dish and blend again.
5. Add a teaspoon full of mixture to each molds and press in firmly. If not using moulds you can roll into balls then flatten out into a circle shape on baking paper.
6. Place into fridge/freezer to set. Best to leave for a couple of hours in fridge or at least half an hour in freezer.
7. Once your cookies are set, melt chocolate on a low heat using your preferred method and dip each cookie half way into the melted chocolate.
8. Place each dipped cookie on baking paper and pop into fridge to set.
9. ENJOY!

Note: Using the moulds used for the photo (12 per tray), this mix yielded 22 cookies. This quantity may vary depending on the mould you use and the thickness of the cookies.
