DELICIOUS dairy free and low in sugar our Raspberry Custard Tart is sure to be a hit with all healthy mums trying to eat healthy and lose baby weight – at only 133 cals per serve!

Raspberry Custard Tart

  1. Whisk 4 eggs with 2 tbsp of brown sugar, 2 tbsp of castor sugar and 1 tsp of vanilla extract.
  2. In a pot place 1 tbsp of custard powder and slowly make a paste with 1 cup of almond milk until it is all combined
  3. Over a medium heat stir until it thickens up.
  4. While cooling spray a spring form tin with olive oil spray and layer 4 sheets of filo pastry making sure you spray between layers so they stick together.
  5. Add 100grms of frozen raspberries to the tin.
  6. Combine the egg mixture into custard constantly whisking so eggs don’t separate. Place in 180° oven for 40 – 45 mins.
  7. Cool in tin.

Serves 8 at 133 calories a serve.
