Burgers are an easy to prepare meal that can still be eaten while on a healthy eating plan. At only 330 calories these homemade veggie burgers are a much better alternative to takeaway burgers or fast food. And with vegetarian food like this, who needs meat!
Rainbow Veggie Burger
Ingredients for the veggie patty
- ⅓ cup brown lentils (cooked)
- 1 slice of wholemeal bread
- 1 tsp minced garlic
- 1 tsp parsley
- ½ tsp curry powder
- ¼ tsp tumeric powder
- 1 tsp maple syrup
Ingredients for the burger
- 1 small roll of your choice
- ½ tomato sliced
- ½ cup lettuce leaves
- 2 slices of beetroot
- ⅓ red onion
Ingredients for the sauce
- 1 tbsp mustard
- 1 tsp maple syrup
- Dash of water
Mix well together.
Method
- Mix all the ingredients for the veggie patty in a food processor until well combined. (I used canned lentils – make sure you rinse them well under water before using them.)
- Form mix into a patty
- Can cook in the oven at 190°c until browned, or in a fry pan until browned on each side.
- While browning the patty, soften the onion in the same pan. Add a little water over the top of the onions to soften them more easily.
- Construct your burger, top with the mustard maple sauce and enjoy!
Recipe makes 1 burger, 330 calories per burger.
