INGREDIENTS

  • 1 cup sweet potato purée
  • 1/3 cup melted coconut oil
  • 1/2 cup honey
  • 2 eggs
  • 1 tbls cocoa/cacao powder
  • 1 tsp pumpkin pie spice
  • 100 gm wholemeal plain flour

METHOD

  • In a bowl combine coconut oil, honey, sweet potato, eggs. Mix well.
  • Then add in the flour, pumpkin pie spice and cocoa. Whisk to combine well.
  • Grease a microwave bowl/container and pour in mixture.
  • Microwave on high for approx 10 minutes, then allow to stand for a further 10 minutes before slicing.
  • Note: This is very moist! and still looks a little under cooked when ready. I used a round container and cut into 12 wedges. Microwave times may vary depending on microwave/power

Serves 12, 162 calories per serve.
