Rachel has sent in a delicious and healthy version of a brownie recipe with hidden veggies for the kids – tasty and healthy, it’s a win-win!
INGREDIENTS
- 1 cup sweet potato purée
- 1/3 cup melted coconut oil
- 1/2 cup honey
- 2 eggs
- 1 tbls cocoa/cacao powder
- 1 tsp pumpkin pie spice
- 100 gm wholemeal plain flour
METHOD
- In a bowl combine coconut oil, honey, sweet potato, eggs. Mix well.
- Then add in the flour, pumpkin pie spice and cocoa. Whisk to combine well.
- Grease a microwave bowl/container and pour in mixture.
- Microwave on high for approx 10 minutes, then allow to stand for a further 10 minutes before slicing.
- Note: This is very moist! and still looks a little under cooked when ready. I used a round container and cut into 12 wedges. Microwave times may vary depending on microwave/power
Serves 12, 162 calories per serve.
