Healthy eating meals or following a weight loss plan to lose pregnancy weight doesn’t have to mean bland and boring meals (and when you follow our Lose Baby Weight plans and Healthy Mummy Smoothies we try and give you as much inspiration as possible on how to eat easy and tasty healthy foods)
Infact, it can mean the opposite and when you start experimenting with different flavours and foods you will find that not only does it help you lose your pregnancy weight but you will feel better and have more energy from the increased number of nutrients your body is getting.
I like to create new healthy eating and weight loss recipes all the time and I must admit that most of them come from digging around in my fridge or cupboard and using the goodies I can find – and most of the time it comes out well!
Below is a recipe I have just made for Quinoa & lentil salad with lime flavoured cod and it was a success – plus is packed full of fibre and protein to keep away post dinner snacking and overeating.
Ingredients
- 1/2 cup of Quinoa
- 1 x tin of lentils
- 1 x red capsicum
- 3 x limes
- 1 x bag of spinach
- 1/4 of a cucumber cut into slices
- 1 x handful of chopped mint
- 2 x chopped up tomatoes
- 1 x tbsp of olive oil and 2 x tbsp of balsamic vinegar
- 1 x fillet white fish per person
Directions
Cook the Quinoa for approx 10-15 minutes in a pan of boiling water and once cooked, drain it and place it in a large salad bowl. Next prepare all your salad ingredients and add to the bowl. Drain and wash the lentils and add those to the bowl. Then add in the olive oil and vinegar plus the juice of 1 of the limes. Mix well and set aside to serve once the fish is cooked.
For the fish, place in some foil and squeeze over the rest of the limes and bake in a moderate heat oven for approximately 15 minutes. Before serving squeeze some more lime juice over them and serve on a plate with your quinoa and lentil salad. Easy, healthy and delicious!
