If you are looking for a fast, healthy and weight loss friendly meal – then this incredible Laksa (from our 28 Day Weight loss Challenge) is easy, delicious and much lower in calories than your typical take-away Laksa.
Prep Time: 10 mins Cooking Time: 10 mins (Serves 1)
Ingredients
- 150 grams of chicken breast fillets
1 small head bok choy (150 grams)
- Cooking oil spray
- 1 tablespoon laksa paste store-bought (20 grams)
- 1 & 1/4 cups liquid chicken stock, salt reduced
- (312.5 mls) 30 grams of coconut cream

Method
- Cut chicken into thick strips. Trim and chop bok choy.
- Heat a saucepan over medium-high heat and lightly spray with cooking oil spray.
- Add laksa paste and cook for a minute or so, then add stock. Bring to the boil. Add chicken and simmer for 5 minutes until cooked through. Add coconut cream and bok choy. Simmer for a few more minutes to cook the boy choy then serve.
