A big thank you to Kathryn Loef for sending in this new twist on pancakes, giving us a healthy recipe for breakfast. A low-carb and high protein breakfast to start your day, with the added goodness of coconut oil.
It’s so important to ensure you have a healthy breakfast every day. Breakfast kick starts your metabolism for the day and wakes your body up. It gives you energy for concentration and helps to avoid the dreaded ‘pick-me-up’ snacks at mid morning time.
Ingredients:
- 1 ripe banana
- 2 eggs
- 1 scoop of The Healthy Mummy Smoothie powder (any flavour, I used Strawberry)
- 1 tablespoon of coconut oil (heat until liquid if yours is solid)
Directions:
- In a large bowl, mash banana well with a fork.
- Add in both eggs and whisk until combined.
- Sprinkle in a scoop of smoothie powder. Whisk until no lumps are present.
- Mix in the tablespoon of coconut oil. You should now have a thick, but pourable mixture.
- Heat a pan on high and grease with coconut oil.
- Pour a quarter of the mixture into the pan. Put the lid on to help the top set (this makes flipping easier!).
- Once the edges are golden, flip your pancake over and cook on the other side.
- Repeat for the remainder of the mixture, making 4 pancakes in total.
Serves: 4. Calories per serve: 122
These pancakes already have healthy fat in them, and the natural sweetness from the banana, so you don’t need to add anything on top for flavour if you don’t want to. Of course, the flavour possibilities are endless if you do want to experiment!
Tip:
I cook these without the Smoothie Powder for my son. He loves them! Plus they have no sugar or processed white flour, so are much better for you than traditional pancakes.
