Mornings are one of the busiest times of day as a mum. Kids to wake up, feed, dress, and so on and so on and exhausting so on.
Naturally it can be hard to make time for a balanced breakfast that fits in with your weight loss goals.
Healthy Mummy Smoothies are amazing for this exact reason, but there are plenty of other quick wholesome breakfasts to fill you up and keep you going throughout the day and this recipe for poached eggs with avocado and tomato on toast is a prime example!
Prep Time: 5 mins Cooking Time: 4 mins
Ingredients (Makes 1 serve)
- 1 teaspoon white vinegar (5 mls)
- 2 free-range eggs (100 grams)
- 1 slice wholegrain or gluten-free bread of choice (40 grams)
- 1/4 avocado (30 grams)
- 1/2 tomato (50 grams)
- salt
- pepper
Method
- Fill a saucepan about three quarters full with water and bring to the boil then reduce to a gentle simmer. Add the vinegar.
- Using a wooden spoon or similar swirl the water around to create a whirlpool and slowly crack the eggs into the simmering water. The whirlpool will allow the egg white to wrap around the yolk. Poach in the water for 2 to 4 minutes until cooked to your liking. Depending on the size of the saucepan used, you can poach 2 – 3 eggs at a time.
- Spread toasted bread with avocado and top with sliced tomato.
- Place poached eggs on top of toasted bread.
- Season with salt and pepper if desired and serve immediately.
