Ingredients
- 450g boneless chicken thighs cut into strips
- 1 broccoli cut into florets
- 100g snow peas
- 2 cups baby spinach leaves
- 1 Bok Choy
- 1 tbsp of coconut oil
- 1 tbsp of Tamari sauce
- 1 lemon
- 1/2 cup cooked Quinoa
- 1 tbsp of natural peanut butter
- Coriander leaves
Method
- Cook quinoa as per instructions.
- Heat coconut oil in a fry pan,
- Add chicken thighs and cook until brown.
- Add broccoli, snow peas, spinach and Bok Choy cook until tender.
- Add Tamari sauce and peanut butter mix until combined.
- Once chicken is cooked add the cooked quinoa and lemon juice and stir through.
- Top with fresh coriander leaves.
