Carissa says ‘I have begun a love affair with chickpeas since being inspired by the many recipes using chickpeas on the Lose Baby Weight website!
As a result, I have been playing around with using them in various recipes and have come up with a recipe for Peanut Butter Chickpea Balls!
Ingredients:
- 3 tbsp Healthy Mummy Smoothie mix (vanilla or chocolate)
- 1 tbsp peanut butter
- 50g oats
- 40g chickpeas
- 40g dates
- 1 tsp vanilla essence or cacao (if using choc mix)
- 2 tsp coconut sugar/agave nectar/maple syrup/honey
- 1/4 cup water (more or less)
Method:
- Put all ingredients (except for water) into a food processor or Thermomix and whiz it all up (in my Thermie I used speed 7 for about 10seconds).
- Add the water gradually until it is crumbly, but sticks together when pressed. You may need a bit less or more of the 1/4 cup of water.
- Makes: 20 balls. Calories per ball: 35. You can also substitute the chickpeas for almonds or cashews, but the calories would then be around 45 cals per ball.
