Either way there is something so comforting and satisfying about these healthy salmon rissoles flavoured with fresh parsley and zingy lime.
Serve them with a crispy salad, on a bun as a burger, with some steamed veg, with some healthy fried rice, or one their own as a filling and wholesome snack.
A healthy hit of protein like these salmon rissoles will keep you fuller for longer, which is great if you are trying to lose weight.
Salmon is low in calories as well as saturated fat; and is one of the best sources of essential omega 3 fatty acids. These acids help promote healthy joints, clear skin, and reduce your risk of cardiovascular disease.
Ingredients:
- 400g tin of salmon
- 1 small white onion, peeled and very finely chopped
- 1 lime, zested and juiced
- Small bunch of fresh parsley, finely chopped (include stems)
- 1 egg
- 3 slices of grainy wholemeal bread, processed into breadcrumbs
- Salt and pepper to taste
- Olive oil spray
Method:
- Place all ingredients in a bowl and bring together with a wooden spoon.
- Wet your hands and shape the mixture into 12 thick rissoles.
- Heat a large frying pan over med/high heat and spray with olive oil.
- Cook for around 5 minutes until golden and then flip over to cook the other side.
Makes: 12. Serves: 6. Calories per serve: 175.
