All you need to do is cook your noodles, and the rest of the sauce and the vegetables are just mixed together at the end – too easy!
Natural peanut butter gives a great satay style flavour to this dish.
And the addition of all the healthy colourful veggies packs a big crunch too.
You could easily throw in some cooked BBQ chicken if you had some, some leftover roast beef, or some cooked prawns would work well too.
Always try to keep your meals full of colour – it’s a great way to ensure you are getting plenty of different nutrients in your diet, which is perfect for when you are trying to lose weight.

Ingredients:
  • 400g pack soba noodles (try to find brown or buckwheat noodles)
  • 2 tbsp 100% peanut butter
  • 2 tsp soy sauce
  • 1 tsp sesame oil (or use olive oil)
  • Juice of 1 lime
  • 2 tbsp sesame seeds
  • 1 large carrot, cut into fine matchsticks
  • 1 red capsicum, very finely sliced
  • 1 cup bean sprouts
  • 1 red chilli, finely chopped (optional)
  • 1 cup coriander, chopped, to serve
Method:
  • Cook noodles according to packet directions, then set aside.
  • In a small bowl, whisk together the peanut butter, soy sauce, sesame seeds, oil, and lime juice.
  • Place the carrot, capsicum, bean sprouts and chilli in with the noodles.
  • Drizzle with the sauce.
  • Serve into 4 bowls and scatter with coriander to serve.
