Nothing makes you feel more like a domestic goddess than serving up scones for morning tea.
And with this tasty recipe you only need 5 ingredients and not one of them is butter!
If you’re going to have a treat, it’s a much better idea to make your own so that you know it doesn’t contain any additives or preservatives that could hinder your weight loss efforts.
Plus you can also teach your kids how to bake – and maybe one day they will be making these for you.
Why not whip up a batch this weekend?
You can use any berries for this, but raspberries, cranberries and blueberries work particularly well.
Ingredients:
- 2 cups self raising flour
- 2 tbsp icing sugar
- 300ml milk
- 1 tbsp fresh lemon juice OR white vinegar
- 150g raspberries (fresh or frozen)
Method:
- Add the lemon juice or vinegar to the milk and allow to stand for 10 minutes.
- Preheat the oven to 220C and grease a round cake tin.
- Sift flour and icing sugar into a bowl.
- Pour in most of the milk and mix with a butter knife to form a sticky dough, add more milk if needed.
- Fold in the raspberries until just combined. You don’t want to over work the dough or the scones will turn out hard.
- On a floured surface, gently knead the dough for 30 seconds and then flatten out to 3cm thick.
- Cut 8 rounds from the dough using a floured cutter, and place them, slightly touching, into the pan.
- Bake for around 20 minutes or until the tops are golden.
- Cool slightly on a wire rack before serving.
Serves: 8. Calories per serve: 160.
