Cookie dough is one of those foods that is just DELICIOUS and best eaten raw. Whether it’s straight out the mixing bowl or set inside ice-cream, every one LOVES it. The only problem, it that it usually does not support weigh loss and a healthy eating plan.
So what if we told you we had a healthy version???? OH YES WE HAVE!!! This amazing cookie dough slice has all the deliciousness of real cookie dough but without the high calories. At just 227 calories per slice it is not only perfectly acceptable to eat as part of a healthy eating plan, but it also contains Healthy Mummy Smoothie power making it GOOD FOR YOU too.
Ingredients
- 2 cups Almond Meal
- 1tbsp Honey
- 3tbsp Melted Coconut Oil
- 2tbsp Vanilla Healthy Mummy Mix
- ¼ cup Dark Choc Chips (melted)
Method
- In a food processor add everything minus the melted dark chocolate
- Mix until it comes together and forms a dough
- We used a silicone loaf pan to put the cookie dough mix in, you could use silicone muffin tins or could even roll into balls if you want
- Once you firmly press down the mix into the pan you are using, pouring the melted chocolate over the top
- Place in the fridge to set for an hour
- Cut into 8 bars (boil some water and fill a jug with it, sit a sharp knife it in, once the knife is heated, cut the bars with the heated knife, this will prevent the chocolate on top from cracking when slicing it).
