healthy_eatingGoji berries, also known as wolfberries, are a favorite superfood of Lose Baby Weight.
They are very high in antioxidants, vitamins, calcium, potassium, iron and zinc.
They are readily available in dried form and a handful makes a healthy snack for the whole family. But what else can you do with them?
Well they go very well with chocolate (what doesn’t??) and bake quite well in moist batters.
They are slightly bitter in flavour but can be soaked with a natural sweetener to counteract this if desired.
Some non-organic brands add a small amount of red dye to their product so soaking will also remove this.
This recipe also uses rice malt syrup, which adds sweetness and moisture to your baking.
It’s a great sugar alternative as it is low GI and will leave your blood sugar levels stable, helping you to avoid those afternoon sugar cravings.
Agave nectar or 100% pure maple syrup can be substituted for rice malt syrup, as these are also low GI, have a similar consistency and level of sweetness.
Goji berries and chocolate are said to increase energy so these mini muffins make an excellent morning or afternoon snack for a quick and healthy pick-me-up.

  • ¼ cup pureed prunes
  • ½ cup rice malt syrup
  • 2 tsp vanilla extract
  • ½ cup coconut flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ¼ cup dried goji berries
  • 1 tsp xylitol or stevia
  • ¼ cup raw cacao powder
  • 3 eggs, at room temperature, beaten
  • ¼ cup dark choc chips
  • ¼ tsp cinnamon powder (optional)
  • Olive oil spray
  • Preheat oven to 180⁰c and spray mini muffin tray with olive oil.
  • Place goji berries and sweetener in a slim cup and pour in boiling water until just covered.
  • Mix pureed prunes, rice malt syrup and vanilla extract.
  • Add beaten eggs and beat combined mixture until frothy.
  • Sift into this mixture the flour, baking powder, salt, cacao and cinnamon. Stir gently with a spatula until well combined.
  • Drain goji berries and fold berries and chocolate chips into mixture.
  • Bake 15-20 minutes or until a skewer placed in the centre comes out clean.
