Today we have a Readers Recipe for a healthy mini version of a Banoffee Pie. These pies are low in fat and refined sugar making them a perfect treat or dessert for you to try while following a healthy eating plan.
Ingredients
Base
- 150gr Dried dates
- 1 tbsp cocoa
- 1 / 2 tsp vanilla extract
- 1 tbsp coconut oil
Filling
- Half of banana
- 2 tbsp almond meal
- 1 / 2 tsp vanilla extract
Topping
- 4 squares of Dark chocolate
Method
- Make the bases by blending the listed ingredients together until well combined and roll into 12 small balls
- Flatten each one then put a small indent in the middle and place into pattie cases
- Next make the filling by blending the banana, almond meal and vanilla together and spoon a dollop on top of each base
- Melt the 4 squares of dark chocolate and place a dollop on each Banoffee Pie
