Today we have a Readers Recipe for a healthy mini version of a Banoffee Pie.  These pies are low in fat and refined sugar making them a perfect treat or dessert for you to try while following a healthy eating plan.

Ingredients

Base

  • 150gr Dried dates
  • 1 tbsp cocoa
  • 1 / 2 tsp vanilla extract
  • 1 tbsp coconut oil

Filling

  • Half of banana
  • 2 tbsp almond meal
  • 1 / 2 tsp vanilla extract

 Topping

  • 4 squares of Dark chocolate

Method

  •  Make the bases by blending the listed ingredients together until well combined and roll into 12 small balls
  • Flatten each one then put a small indent in the middle and place into pattie cases
  •  Next make the filling by blending the banana, almond meal and vanilla together and spoon a dollop on top of each base
  •  Melt the 4 squares of dark chocolate and place a dollop on each Banoffee Pie

Makes 12 “pies”
