Today we are sharing a super delicious and hearty recipe from the 28 Day Challenge which is perfect for these cooler Winter nights.
Bacon, vegetables, pasta and beans turn this soup into a hearty, healthy soup for the whole family. Increase quantities to serve the whole family or freeze or refrigerate in individual portions for future meals.
Minestrone & Bean Soup
Ingredients (Makes 1 serve)
- 1 teaspoon extra virgin olive oil (5 mls)
- 1/4 brown onion (25 grams)
- 1/2 clove garlic (1.5 grams)
- 1 bacon rasher, lean & trimmed (27 grams)
- 1/2 carrot (35 grams)
- 1/4 potato (30 grams)
- 1/2 stalk celery (20 grams)
- 1 cup liquid vegetable stock, salt reduced (250 mls)
- 100 grams of tinned cannellini beans
- 100 grams of tinned tomatoes
- 1/4 cup wholemeal pasta, any shape (25 grams)
- salt
- pepper
- 1 tablespoon fresh parsley (5 grams)
Method
- Dice the onion and garlic. Remove the rind and roughly chop the bacon, peel and chop the carrot, chop the celery and potato, rinse and drain the cannellini beans. Chop the parsley.
- Heat olive oil in large saucepan over medium heat and add onion. Sauté for 5 minutes or until lightly browned.
- Add bacon, carrot, celery, potato and garlic and stir to combine. Cook uncovered for further 5 minutes, stirring regularly.
- Add the stock, beans and tomatoes and cover and bring to the boil.
- Simmer, covered, stirring occasionally, for 20 minutes.
- Increase heat, add pasta and cook for further 10 minutes until pasta is al dente, add some water if soup gets too thick once pasta is cooked.
- Season with salt and pepper. Serve immediately sprinkled with parsley.
