Mangoes are a deliciously sweet and sticky fruit, often referred to as the “King of fruits” – and with good reason.
prawn_mango_saladThey are jam-packed with vitamins and nutrients, including vitamin C and E, which both aid with iron absorption, amino acids, beta carotene and vitamin A to boost eye health, flavonoids to boost health and much, much more.
Mangoes also contain a very specific enzyme that can actually boost digestion – aiding digestive health and also helping with weight loss, as the more efficient your digestive system, the easier you’ll find it to lose weight.
It also contains lots of fibre, helping to fill you up for relatively few calories – making it an excellent fruit to include in your Lose Baby Weight loss plan.
Mangoes are low in calories too – 1 medium mango contains around 135 calories.
They’re incredibly versatile, so chop them up and add them to your favourite salad for a vitamin and weight loss boosting burst of flavour, whiz them into purees and drizzle over yoghurt, or add them into your Healthy Mummy Smoothies or chop and sprinkle over your favourite granola.

Thai-Inspired Mango and Prawn Salad

Mango, prawns, cucumber, salad leaves, coriander and chilli are served together with a creamy, tangy dressing in this easy recipe.
Ingredients:

  • 2 mangoes
  • 250g tiger prawns, peeled, cooked, ready to eat
  • 300g salad leaves of choice
  • 1 medium cucumber
  • 1 red chilli
  • Small handful freshly chopped coriander
  • Juice of 1 lime
  • 4 tbsp. natural yoghurt
  • Small dash fish sauce to taste
  • Salt and pepper

Directions:

  1. Slice the mangoes in half around the stone, then twist the fruit to open up the fruit. Carefully insert the knife into the stone, remove, then score into the flesh of the mango down to the skin horizontally, then score across vertically to create little cubes. Alternatively, score the mango into strips. Strip the mango flesh away from the mango skin.
  2. Slice the cucumber in half and discard the ends. Scoop out the seeds with a spoon and slice using a potato peeler so you get ribbons of cucumber.
  3. Slice the chilli in half lengthways, then scrape out the seeds using the back of your knife. Thinly slice.
  4. Stir the yoghurt, fish sauce and lime juice together and season with salt and pepper to taste.
  5. Arrange the salad leaves on four plates, then layer on the cucumber, prawns, mango pieces and chilli. Drizzle the dressing over and sprinkle with freshly chopped coriander.

Recipe serves 4. Calories per serving: 185. If you prefer, omit the chilli and add another vegetable – we like using crunchy veg like baby carrots and sweetcorn.
