Yummy – this healthy treat is a great one to try out and is a reader recipe sent in by Lily Bullen and a great one for a snack on your weight loss plan
Ingredients
Base layer:
- Process 2 cups of nuts of choice.
- I used one cup of macadamia nuts & one cup of almonds.
- You’ll also need one cup shredded coconut, 1 teaspoon cinnamon & 1tbs honey or coconut nectar to bind. (Process all ingredients together)
Place in a cake tin to set in the freezer for 30+ minutes.
Middle layer:
- Mix Two cups of yogurt of your choice. 1 teaspoon vanilla essence.
- 1 tbsp sweetener of your choice (honey, nectar)
- Pour filling over base and set for one hour minimum.
Top berry layer:
- Process 2 tbsp yogurt with 1 cup of berries. (I did half frozen strawberries and half mixed berries)
- You can also do with frozen mango
- Plus one serve of the Healthy Mummy Smoothie mix. (Optional)
Pour berry or mango layer on top of yogurt filling and leave to set for another hour.
Keep in the freezer.
Serves 12.
