Low Fat Egg Nog

Ingredients:

    • 1/2 cup Splenda (sugar replacement / 0 calories)
    • 1/4 tsp cinnamon
    • 1/4 tsp freshly grated nutmeg
    • 1 egg
    • 4 egg whites
    • 1-1/2 cups fat free milk
    • 1-1/2 cups fat free half-and-half – or try Nestle Sweetened Condensed Milk
    • 1-1/2 tsp vanilla extract
    • 1/6 cup rum or brandy
    • Freshly grated nutmeg to garnish

Step 1:  Create / Mix  the Custard for the Low-Fat Egg Nog

Combine the sugar replacement, cinnamon and nutmeg in a large bowl. Then add the egg and egg whites, and beat slowly with a mixer for 3-4 minutes.  In a large saucepan over low heat, heat the fat free milk. Make sure that the milk is only warm, and not hot so as not to cook the eggs prematurely during the process.  Gradually and slowly stir the egg mixture into the hot milk. Heat slightly while stirring constantly, until the mixture is slightly thickened. Stir in the vanilla extract and remove it from the heat.

Step 2:  Finish and Serve the Low-Fat Egg Nog

Let the mixture cool down a little.  Then blend it with the fat-free half-and-half milk. Cover and chill in the refrigerator for a couple of hours.   Add rum or brandy and sprinkle with nutmeg before serving.
