INGREDIENTS

  • 2 eggs
  • 2 Tbsp low fat Greek yoghurt
  • 2 Tbsp coconut oil
  • 2 tsp pumpkin pie spice mix
  • 3/4 cup skim milk
  • 1 tsp vanilla essence
  • 2 Scoops vanilla Healthy Mummy Smoothie powder
  • 1 Tbsp honey
  • 1 cup cold cooked pumpkin
  • 1 & 1/4 cups self-raising wholemeal flour
  • 1 Tbsp stevia

For drizzling once cooked

  • 1 Tbsp honey
  • 2 tsp coconut sugar
  • 2 tsp cinnamon

METHOD

  • Preheat oven to 140C. Lightly spray an oven-doughnut tray or muffin tray.
  • Place all ingredients except the self raising flour into a blender or mixer. Blend until combined.
  • Pour into a bowl, and slowly fold in the self raising flour.
  • Place mixture in the prepared tray and bake for 15 minutes or until slightly browned.
  • Turn out onto a cooling rack and drizzle with warmed honey, and then sprinkle with the combined coconut sugar and cinnamon.

Makes 12, 99 calories each.
