INGREDIENTS
- 2 eggs
- 2 Tbsp low fat Greek yoghurt
- 2 Tbsp coconut oil
- 2 tsp pumpkin pie spice mix
- 3/4 cup skim milk
- 1 tsp vanilla essence
- 2 Scoops vanilla Healthy Mummy Smoothie powder
- 1 Tbsp honey
- 1 cup cold cooked pumpkin
- 1 & 1/4 cups self-raising wholemeal flour
- 1 Tbsp stevia
For drizzling once cooked
- 1 Tbsp honey
- 2 tsp coconut sugar
- 2 tsp cinnamon
METHOD
- Preheat oven to 140C. Lightly spray an oven-doughnut tray or muffin tray.
- Place all ingredients except the self raising flour into a blender or mixer. Blend until combined.
- Pour into a bowl, and slowly fold in the self raising flour.
- Place mixture in the prepared tray and bake for 15 minutes or until slightly browned.
- Turn out onto a cooling rack and drizzle with warmed honey, and then sprinkle with the combined coconut sugar and cinnamon.
Makes 12, 99 calories each.
