Sometimes, getting kids to eat healthy foods can be tough. Sometimes we can have kids who will eat any food and are angels in the ‘eat anything healthy’ department and other times it seems like an impossible task to try and get anything healthy into their bodies.

Healthy Chicken Nuggets
As with fish fingers, store-bought chicken nuggets can be full of ingredients that are not identifiable as food, plus a lot of unnecessary sodium.
Some are better than others but, nutritionally, you can’t beat homemade. Choosing breast meat reduces the fat content, but dark meat or thigh meat has a lot of flavour.
The choice is personal, but both are packed with protein.
INGREDIENTS
- 2 chicken breasts
- 1 1⁄2 cups breadcrumbs
- 3⁄4 cup grated parmesan
- 2 eggs, beaten
- Olive oil spray
METHOD
- Preheat oven to 200°C.
- Cut the chicken into 2cm chunks.
- Combine breadcrumbs and parmesan.
- Dip chicken into the beaten egg, then into the breadcrumb mixture.
- Lay chicken on a lined baking tray and spray with oil.
- Bake for 10 minutes.
