  • 1 cup raw almonds
  • 1 cup oats
  • 1 serve of Healthy Mummy vanilla powder
  • 1/2 cup raw cocao powder
  • 1/2 cup egg whites
  • 2 large teaspoons baking powder
  • 3/4 cup natural powder form stevia/natural sweetener of choice
  • 1 cup 100% fat free Greek yogurt
  • 6 squares of Dark Chocolate
  • 6 tsp Natural Peanut Butter


  • Pre heat oven to 180 deg and grease your cupcake/muffin tray.
  • Process the almonds, oats, Vanilla smoothie mix and cocao until it is in powder formed
  • then add the egg white, baking powder, sweetener and yoghurt and process again – add a little water into the mix until a soft pouring consistency is reached.
  • Half fill pre prepared cupcake/muffin tins with the mixture and then add half a square of dark chocolate and half a teaspoon of natural peanut butter into the tins.
  • Then fill the tins with the mixture to cover.
  • Bake until soft and bouncy – I baked for 20 mins on 180, baking times will depend on your oven
  • Best way to eat is hot for the lava to pour out, you can freeze and then microwave also to get the same effect
