Here is another submission for our Healthy Kids Recipes Competition that is running on our Private Facebook Support Group for REAL MUMS to send in their healthy and yummy baking recipes that are LOVED by their kids and can be enjoyed while following a healthy eating plan.
Today we have this DELICIOUS recipe for you to try, Healthy Bacon, Pumpkin & Cheese Muffins and a BIG Thank You to Samantha Stedman for submitting her recipe.
Ingredients
- 500g packet frozen pumpkin (fresh works just as well)
- 150g shortcut bacon (fat trimmed)
- 100g light grated cheese
- 30g Parmesan
- 300g self-raising flour
- 2 eggs
- 280ml milk of choice
Method
- Preheat oven to 180 degrees
- Grease 18 muffins tins.
- Microwave frozen/fresh pumpkin as per directions on the packet.
- Dice the bacon and fry in non stick pan for 2-3 minutes.
- Mash cooked pumpkin and add bacon, leave to cool.
- Mix in Parmesan and cheddar cheese.
- Add flour, egg and milk and mix until just combined.
- Divide into greased muffin tins.
- Bake for 25-30 minutes or until cooked through.
- Note- due to the amount of cheese, muffins may seem uncooked in the middle if eaten while still hot but will firm up when cooled.
Makes 18 muffins, 122 calories each muffin
