This breakfast is my go to when I don’t have my usual Healthy Mummy Smoothie. It is super quick and easy and works with all kinds of stone fruits and even apples or pears. It keeps me full for my normal action packed days and gives me lots of energy too.

Stewed Peaches With Oats & Seeds



  • stewed peaches1 large peaches with stone, fresh (145 grams)
  • 125 mls water
  • 1/3 teaspoons vanilla extract (1.3 mls)
  • 1 teaspoons honey (5 mls)
  • 1/4 cups rolled oats (30 grams)
  • 4 teaspoons pumpkin (or pepita) seeds, roasted (8 grams)
  • 2 teaspoons shredded coconut (5 grams)
  • 1/3 tablespoons sultanas (4 grams)
  • 1 tablespoons Greek reduced fat, natural yoghurt (20 grams)


  • Cut the peach into quarters and remove the stone.
  • In a small saucepan add the peach, water, vanilla and honey. Bring the water to the boil and then reduce to a slow simmer, cooking for approximately 5 minutes, until the peach is very tender.
  • Place the peach in a serving bowl together with the stewing juice and sprinkle the oats, pumpkin seeds, sultanas and coconut on top.
  • Serve with the yoghurt (use a dairy free option if required).
