Kahsha created this because she LOVES muesli bars. Muesli bars are super convenient and you feel like you’re eating something healthy but we all know how much sugar and other nasties are added to processed muesli bars.
Kahsha needed a healthier version and was inspired by the ingredients she’s learnt how to use through The Healthy Mummy. Such as using honey for sweetening and using coconut oil for cooking and baking. These bars are soft and slightly chewy and so, so delicious.
INGREDIENTS
- 50ml honey
- 1/4 cup coconut oil
- 50g pitted dates (roughly 16 – chopped into small pieces)
- 2 cups oats
METHOD
- Preheat oven to 180°C.
- Combine honey and coconut oil in a saucepan on a low heat until just melted and mixed.
- Remove from heat and add the oats and chopped dates and stir well to combine.
- Mixture will be quite flaky. Line a small loaf tin with baking paper. Press mixture down into tin.
- Bake in the oven for 11-15 mins.
- Cut into 14 pieces, but do not remove from the tray. Place in fridge for 10 minutes to harden up, this will allow you to remove the bars with the baking paper and separate into the 14 pieces without bars crumbling everywhere.
- Bar will be soft and slightly chewy.
Makes 14 serves, 99 calories per serve.
