Ingredients
- 500g chicken breast, chopped into small pieces about 2cms big
- salt and pepper to taste
- cooking oil spray
- 1 brown onion, diced
- 1 capsicum, seeded and diced
- 3 tspn minced garlic
- 400g tinned diced tomatoes
- 400g tinned corn, drained
- 1 tspn each of garlic powder, paprika, cayenne pepper, onion powder, oregano, cumin and salt
- 1 cup chicken stock
- 1 tspn dried coriander
- 1/3 cup light Greek yoghurt
- 6 multigrain wraps, each cut into 8 triangles
- 100g light tasty cheese, grated
Method
- Spray a large oven dish with cooking oil. Set aside. Preheat oven to 180°C.
- Sprinkle salt and pepper over diced chicken. Mix through to coat evenly. Spray a frypan lightly with cooking oil and cook chicken until lightly brown over a high heat. Place cooked chicken into oven dish.
- Using the same frypan cook garlic, onion and capsicum until fragrant and slightly softened. Pour into oven dish with chicken.
- Add tinned tomatoes, corn, listed spices, chicken stock and coriander to oven dish. Stir through, cover with foil and bake in oven for 30 minutes. Remove foil after this time and cook for a further 30 minutes.
- Remove dish from oven and allow to cool slightly for 10 minutes. Stir through yoghurt.
- Bake wrap triangles in oven until crispy and light brown.
- Make up nachos in a small oven dish using crispy triangles, chicken mix and cheese then bake in oven until cheese has melted.
