Ingredients
- 3 x large whole eggs
- 6 x egg whites
- 1 x roughly chopped zucchini
- 1 x chopped red capsicum
- 1 x roughly chopped red onion
- 3 large tomatoes – roughly chopped
- 1 x cup of broccolli florets
- 2 x chopped carrots
- 2 x cloves of crushed garlic
- 1/2 cup low fat and grated cheese
Directions
Heat a little oil in a pan and lightly cook the vegetables for approx 5 mins adding in the chopped tomato at the 5 minute mark then cooking for a further 2 minutes. In a large bowl, whisk the egg and add in the cheese.
Then pour over the egg mixture over the the vegetables in the pan and cook on a light heat for 10 minutes. Next place under the grill for a few more minutes and cut into slices and serve with a big salad
