In between fussy children and hungry partners, sometimes it’s difficult to find satisfying yet nutritious meals that are good to include in your healthy eating plan.
This high-protein, low-calorie recipe for Honey Lemon Chicken Drumsticks is ideal for a mid-week meal because it is packed with flavour and nutrition, but simple to make with a few ingredients.
Ingredients:
- 8 skinless chicken drumsticks
- 1 tablespoons of olive oil
- Third of a cup of honey
- Juice of one lemon
- 1 cup of rocket
- 1 red chilli, finely sliced
- 1 large handful of alfalfa sprouts
Optional Extras:
- Replace the rocket with baby spinach or other salad greens
- Leave out the chilli and use chopped cherry tomatoes instead
- If you don’t have a lemon on hand, use the juice of another citrus fruit, like a lime or an orange
Method:
- Preheat an oven to 200 degrees Celsius.
- Combine the oil, honey and lemon juice in a bowl, then pour into a baking tray.
- Place chicken drumsticks in the tray ensuring that the drumsticks are coated with the honey, lemon and oil mixture.
- Bake for 40 minutes in the oven, turning once to ensure all sides of the drumsticks are cooked.
- While the chicken is cooking, place the rocket, alfalfa and chilli on a large serving platter.
- When the chicken is browned and cooked through, remove from the oven and arrange on the serving platter on top of the rocket mix and serve immediately.
