Ingredients
Base
- 2 cups of rolled oats
- 1/2 cup almond meal
- 1/3 cup honey
- 1tbsp coconut oil
Caramel Layer
- 6 medjool dates
- 1/4 unsweetened almond milk (or any milk of choice)
- 1/4 cup water
Chocolate layer
- 1/3 cup dark chocolate buttons
Method
- finely dice the dates and add them into a small saucepan with the water
- let them simmer until the dates start to soften and the water starts to evaporate
- once the water has evaporated add the almond milk and mix well, let the mix thicken up and then set aside
- process the base ingredients together until a fine crumb has formed
- press base mix into a square tin that is lined with baking paper and put into the freezer while you move onto the next step
- Take your date mix that has cooled and put into a processor and blend until the date mix is smooth then spread the date mix over the top of your base
- melt your chocolate in a bowl in the microwave, checking regularly so it doesn’t burn
- once melted spread over the top of the date layer, then put into the fridge or freezer to set
- It important when you cut the bars to use a knife that is hot, so heat the knife in a jug of boiling water before each cut is made, this will prevent the chocolate cracking
