Ingredients

Base

  • 2 cups of rolled oats
  • 1/2 cup almond meal
  • 1/3 cup honey
  • 1tbsp coconut oil

Caramel Layer

  • 6 medjool dates
  • 1/4 unsweetened almond milk (or any milk of choice)
  • 1/4 cup water

Chocolate layer

  • 1/3 cup dark chocolate buttons

Method

  • finely dice the dates and add them into a small saucepan with the water
  • let them simmer until the dates start to soften and the water starts to evaporate
  • once the water has evaporated add the almond milk and mix well, let the mix thicken up and then set aside
  • process the base ingredients together until a fine crumb has formed
  • press base mix into a square tin that is lined with baking paper and put into the freezer while you move onto the next step
  • Take your date mix that has cooled and put into a processor and blend until the date mix is smooth then spread the date mix over the top of your base
  • melt your chocolate in a bowl in the microwave, checking regularly so it doesn’t burn
  • once melted spread over the top of the date layer, then put into the fridge or freezer to set
  • It important when you cut the bars to use a knife that is hot, so heat the knife in a jug of boiling water before each cut is made, this will prevent the chocolate cracking
