Tiramisu is one of those desserts that you tend to avoid if you’re following a Healthy Eating Plan, because it’s calories count is too high. Luckily we hate the thought of depriving you of delicious food, so we’ve found a healthy, low fat version of Tiramisu that is JUST as DELICIOUS as the original but with only 188 calories per serve.
Ingredients
- 400g Ricotta
- 2tbsp natural Greek yoghurt
- 2tbsp Honey
- 1tsp Vanilla Extract
- 8 Italian Sponge Finger Biscuits
- 1tsp of ground coffee, mixed with 200ml hot water
- Cacao to dust over the top
Method
- In a food processor combine the ricotta, yoghurt, honey and vanilla. Process until well combined and then set aside
- Get you pan ready, I use a silicone loaf pan. I laid a piece of baking paper through the centre of my loaf tin, so the baking paper hung past the edges and when ready I could just hold the ends of the paper and lift out, if that makes sense
- Roll the sponge finger in the coffee mix one at a time. Roll them once or twice and not for too long other wise they will go soggy and fall apart.
- Layer 4 sponge fingers on the bottom, then cover with some of the ricotta mix so they are covered, then repeat with the other four sponge fingers, cover with remaining ricotta mix, then dust some cacao over the top.
- Put in the fridge to set around 3hrs
