The festive season can be tricky when you add the weight loss equation into things. While you may have found your groove in the months leading up to December, everything goes a little bit crazy once the Christmas lights are switched on. Colleagues, friends and family who may have been completely onboard with your healthy eating plans in the past may suddenly appear at your desk or home laden down with sweet treats and other calorific treats.
 

Healthy Strawberry Santas

We know that deprivation is never the answer. Not only will you feel miserable and left out but chances are good that you’ll end up cracking under the pressure and eating your way through the kids’ advent calendars.
The solution? Preparing in advance and creating a resource of delicious yet healthy Christmas recipes. With a few tweaks and the new knowledge you’ve gained about ingredients and calories, you can create a variety of gorgeous sweet and savoury treats that won’t throw your healthy eating and weight loss plans into a spin.
These healthy santa snacks are an excellent case in point. Instead of using calorie heavy pastry or biscuit, these little renditions of the man in red him-self use delicious, in-season strawberries. The traditional whipped cream that is often a staple of festive desserts is replaced with low fat cream cheese, creating a simple but yummy sweet treat or dessert that is both low in fat and high in bone loving calcium.
While a small amount of coconut is used in the recipe, to help ‘whip’ up the cream cheese and give it some shape, the mass that you’ll be making means that each Santa has less than ¼ tsp of sugar per serve.
These are also fantastic for the kids’ table at a Christmas party.
When choosing your strawberries, try and pick a punnet with large, plump berries as these will be easier to slice and hold more filling.

Ingredients
  • 2 punnets of fresh strawberries, rinsed
  • 1 cup of low fat cream cheese
  • 1 tbsp coconut 
  • ½ tsp vanilla essence
 Directions
  1. Take the cream cheese out of the fridge, add the vanilla and sugar, and using a whisk or electric beaters, give it a good mix till it appears smooth and fluffy. Set aside to reach room temperature.
  2. Using a small, sharp knife, slice the bottom and very top off each strawberry.
  3. Sit strawberries on top of absorbent kitchen paper (flat side down).
  4. Spoon the cream cheese into a piping bag. You can make one of these by cutting the corner off a ziplock plastic bag.
  5. Working carefully, pipe the mixture onto the surface of the strawberry to create Santa’s ‘head’.
  6. Slowly pipe a small amount of cream cheese onto the front of the strawberry to create Santa’s ‘beard’.
  7. Place the top of the strawberry on top of the cream cheese head.
  8. Either serve immediately or place straight in the fridge.
