Here is another yummy entry into our Healthy Baking Competition that is running on our Private Facebook Support Group for REAL MUMS to send in their healthy and yummy baking recipes that can be enjoyed while following a healthy eating plan.
Today we have this DELICIOUS recipe for you to try, Mango Coconut Cake and a BIG Thank You to Laura Flanagan for submitting her recipe.
Ingredients
- 1.5 cups wholemeal flour
- 5 mashed mango cheeks
- 1/4 cup maple syrup
- 2 tbs melted coconut oil
- 1/4 cup milk
- 2 eggs
Syrup
- 1 tsp coconut oil
- 3 tbs coconut sugar
- 1/4 cup boiling water
Method
- Mix all cake ingredients in bowl until well combined
- Cook at 160 for 45 mins in a springform tin (or any other round baking tin) until golden and a skewer comes out clean
- Make syrup by cooking syrup ingredients in a small saucepan for 5 mins over a medium heat
- Poke holes in cake and drizzle syrup on top
- Enjoy!
