Here is another yummy entry into our Healthy Baking Competition that is running on our Private Facebook Support Group for REAL MUMS to send in their healthy and yummy baking recipes that can be enjoyed while following a healthy eating plan.
Today we have this YUMMY recipe for you to try, Peanut Butter & Vanilla Cookies and a BIG Thank You to Jessica Sullivan for submitting her recipe.
Ingredients
- 2 1/2 cups wholemeal self rising flour
- 2 tbsp Vanilla Healthy Mummy Smoothie Mix
- 1 tbsp butter
- 2 eggs
- 1 tbsp vanilla extract
- 1 cup coconut sugar
- 1/2 cup natural peanut butter
Method
- Mix together the butter, egg, vanilla, peanut butter and sugar.
- In another bowl mix flour and Healthy Mummy Smoothie Mix
- Add dry mixture to wet mixture
- Roll into balls, lay on baking tray then flatten with fork
- Bake at 180 for 10 minutes (or until golden brown)
- Makes approx 20 cookies
