Peanut butter lovers – this one is for you!
These delicious little peanut butter cups will melt in your mouth before you get to the burst of fresh raspberries. At only 133 calories each, how can you resist adding them to your healthy eating plan.
Ingredients – Raspberry Filling
- 1/2 cup frozen raspberries
- 1 tablespoon chia seeds
- 1 tablespoon water
- 1 tablespoon maple syrup
Method
- Mix all ingredients together in saucepan on medium heat, continue to mix until it comes to the boil.
- Reduce heat to simmer and cook for further 2-3 minutes until mixture thickens. (continue to mix during this time).
- Be sure to mash raspberries during this time so mixture is not lumpy.
- Remove from heat and allow to cool.
Ingredients -Peanut Butter Cup
- 1/2 cup peanut butter
- 1/3 cup coconut oil (liquified but not hot)
- 4 drops liquid stevia (optional)
Method
- Mix ingredients together until smooth and well combined. (It does seem very runny at this point but will combine well).
- Add one teaspoon of mixture into silicon moulds or small paper patty cases then pop into freezer/fridge to set.
- Once set, remove from freezer/fridge and place approx 1/2 teaspoon of raspberry filling on top of base. Flatten slightly but try to leave a small rim around the filling so the peanut butter mix can completely cover the raspberry.
- Top with remaining peanut butter mixture and pop back in freezer/fridge to set.
Keep stored in fridge.
