Believe it or not but these delicious mini apple tarts are HEALTHY!! So if you’re following a healthy weight loss plan, then there is no need to feel guilty about having one or two of them. They taste even better than they look, and they’re really quite simple to whip up. The amazing caramel sauce alone will make sure these are a regular on your baking list.
Tart Base
- ¼ cup nuts (I used roasted almonds)
- ¼ cup shredded coconut (can use desiccated)
- 6 medjool dates (can use pitted dates but will need approx 18 dates soaked in hot water for 15 minutes)
- ¼ cup rolled oats
- 1 tablespoon melted coconut oil
Method for base
- Blitz all ingredients together until you reach your desired consistency.
- Divide equally into 10 portions.
- Place each portion into mini silicon moulds or mini patty cases. Press mixture firmly into base and sides making a case shape.
- Pop in freezer to set
Apple Filling
- 2 teaspoons honey
- 2 teaspoons vanilla extract
- 4 teaspoons water
- ½ teaspoon cinnamon
- 2 teaspoons coconut oil
- 2 medium/large apples – any type
Method for apple filling
- Mix honey, vanilla, water and cinnamon together in a small bowl and set aside
- Peel and core apples then dice into small cubes – set aside
- In a small saucepan, heat the coconut oil on low heat and stir in diced apples. Stir constantly for approx 4 minutes until softened.
- Add mixture of honey, vanilla, water and cinnamon and stir constantly for about 1 minute then remove from heat.
Caramel Sauce
- 4 medjool dates
- 3-4 tablespoons water (depending on your desired thickness)
Method for caramel sauce
- Blitz dates and water together until smooth
Tart construction
- Once tart cases have set you can fill with the apple mixture then top with caramel sauce. Or you can add the caramel sauce into the tart casing first then add the apple on top.
These apple tarts are best keep stored in the fridge.
