While sandwiches, salads and smoothies are all delicious lunch options, sometimes you just fancy something a little bit different. When you’re trying to lose weight and follow a healthy eating plan however, your options can sometimes seem limited.
That doesn’t have to be the case though! While eating healthily can seem to narrow your options, with a little bit of forward planning, there are a whole range of yummy foods you can enjoy.
It’s just a matter of tweaking some things slightly to up the nutrients and cut down on calories. Quesadilla
These super simple mexican inspired quesadilla’s, came about one day when I was down the bare essentials in the pantry and fridge but needed something healthy and tasty to keep me powering on through the afternoon.
When people think of Mexican, they often immediately think ‘high fat’ and ‘unhealthy’. While some dishes could definitely be given that label, the basic components of Mexican food are actually very good for you.
Beans, corn, spicy veggies and avocado are all highly nutritious foods and when prepared correctly, can become a feature of a weight loss and healthy eating diet.
These tortilla ‘sandwiches’ combine protein rich kidney beans with low fat cheese for calcium, chilli for spice and lime juice and coriander for that famous Mexican tang. The best bit? You can whip up a batch of these family friendly tasty treats in less than 15 minutes.

Ingredients

  • 8 wholemeal tortillas
  • 1 x 400g can of kidney beans, drained and rinsed
  • 1 x cup low fat cheese, grated
  • 2 tbsp sweet corn
  • 1/2 long red chilli, finely diced
  • 2 tbsp smoky paprika
  • 1 tbsp lime juice
  • 1 tbsp coriander leaves, roughly chopped
  • Olive oil spray

Directions

  • In a small bowl, mash the kidney beans with a fork till they are well flattened.
  • Add the lime juice, paprika, corn and chilli and stir to combine.
  • On a clean work surface or chopping board, place one tortilla down flat.
  • Cover well with the bean mixture, then sprinkle over the cheese and coriander.
  • Top with another tortilla to form a sandwich.
  • Repeat with remaining 6 tortillas and mixture.
  • Spray a large frypan with olive oil spray and heat over medium heat.
  • Place the first sandwich into the pan to heat through for 4-5 minutes.
  • After time has elapsed, gently flip sandwich to warm through the other side.
  • When done, remove from pan to absorbent kitchen paper and repeat for other three sandwiches.

Makes 4 quesadilla’s – Cal per serve – 400
