Sometimes life happens and you just need a cookie. If you’re following a healthy weight loss plan, then heading the cookie jar is not always the best solution!! That is, unless they are healthy…….
Packed with peanut butter and oats and the sweet richness of natural maple syrup, these healthy Maple and Peanut cookies hit the sweet spot on any bad day (or late night craving). Best of all, they’re only 134 calories each.
Ingredients
- ¾ cup peanut butter
- 4 tablespoons maple syrup
- 1 teaspoon vanilla extract
- ¾ cup oats
- 1 egg
- 25 grams mini dark choc chips (50 choc chips/5 per cookie)
Method:
- Preheat oven to 180 degrees C
- Slowly heat the peanut butter, maple syrup and vanilla in a saucepan over low heat until soft.
- Once softened, stir in oats and mix well.
- Whisk egg and add to mixture. Mix well to combine
- Add tablespoons of mixture to baking paper lined tray and flatten slightly.
- Add choc chips to each cookie and pop tray into oven.
- Bake for 12 minutes (this may vary depending on your oven)
- Eat warm or allow to cool.
Recipe makes 10 cookies, 134 calories each
