Is this not the prettiest cheesecake you’ve ever seen?? We promise you it takes just as good as it looks too and it’s HEALTHY!! Following a healthy eating plan has never been easier when you get to enjoy sweet treat like this without ruining your plan.
Healthy Maple Nut Cheesecake
Ingredients:
- 400grams Ricotta
- 1/3 cup Natural Peanut Butter
- ¼ cup Pure Maple Syrup
- 1tsp Vanilla Extract
- 1 Egg
Method:
- turn oven on to 150 degrees.
- Mix all the ingredients except the egg in a food processor until well combined
- Once well combined add the egg, and continue to blend until mixed well together
- Get cupcake cases (I used the cardboard ones, that are round and quite high, but can use and cupcake cases) fill the cases ¾ high.
- Place in the oven, should take roughly 25-30min you want them slightly brown on top, and are firm to touch
- Once cooked, turn off oven and open the door slightly and let them cool inside for an hour.
- To decorate them, I used some extra natural peanut butter mixed with some pure maple syrup, and some crushed peanuts
Recipe makes 6 depending on which cupcake cases you use. If you use the smaller ribbed cases you could get a few extra cheesecakes, because they are smaller than the cases I used x
200 calories per cheesecake.
