When you’re losing baby weight you don’t want your milk supply (or your tastebuds!) to suffer. Healthy Mummy Cassandra has created this delicious cookie recipe that you can make as is, or add a variety of flavours. Peanut Butter & Choc Chip and Date & Apple flavours are included, but why not invent your own!
The best thing of all as that these cookies help to promote your milk supply when you’re breastfeeding.
Lactation cookies
Ingredients
- 1 cup quick oats
- 1 cup whole rolled oats
- ½ cup flax almond meal
- 2 ½ level tbs Brewers yeast
- 4 tbs chopped pepitas (pumpkin seeds)
- 4 tbs coconut sugar
- 1 cup desiccated coconut
- 2 tbs coconut oil melted
- 2 eggs
- Add a couple of tbs water if mix is too dry
Method
Combine all dry ingredients in bowl.
If making two flavours, split in half and and add equal amounts of wet ingredients to each batch. Then add the following flavours –
Peanut Butter & Choc Chip Cookies
- 2 heaped tbs natural peanut butter
- ¼ cup dark chocolate chips
This mix can be a bit sticky to roll, so just dampen your hands with water if you find it sticking to your hands.
Date & Apple Cookies
- ½ cup of dried dates chopped then soaked in boiling water for 5 min. Drain then add to mix.
- 1 apple grated
You can add any flavourings you like to the base recipe.
Bake at 150°c for 10-15 min or until golden.
Recipe makes 16 large cookies (8 each flavour), 110 calories per serve.
