Here is another yummy entry into our Healthy Baking Competition that is running on our Private Facebook Support Group for REAL MUMS to send in their healthy and yummy baking recipes that can be enjoyed while following a healthy eating plan.
Today we have this YUMMY recipe for you to try, Iced Cinnamon Scrolls and a BIG Thank You to Jodie Koeleman for submitting her recipe.
Lose Baby Weight- Cinnamon scrolls

INGREDIENTSResults

DOUGH

  • 1 cup wholemeal SR flour
  • 1 cup Greek yoghurt
  • 70g coconut/brown sugar
  • 1 heaped tspn cinnamon
  • 1 tbl coconut oil, melted

ICING

  • 2 tbl light cream cheese
  • 1 tbl butter, softened
  • 1/4 tspn vanilla
  • 50g icing sugar (you could make your own icing sugar by processing coconut sugar in your food processor until a fine powder is made)

METHOD

  • Preheat oven to 180°C. Line a small oven tray with baking paper; spray paper lightly with oil-Set tray aside
  • In a small bowl mix together coconut/brown sugar and cinnamon-Set aside.
  • In a large bowl mix together flour and yoghurt with a spoon until a ball forms
  • On a lightly floured surface knead dough for 30 seconds, If dough is too sticky add a little more flour and continue kneading
  • Use a rolling pin to roll dough out in a large rectangle about 30cm x 20cm big.
  • Brush melted coconut oil over the dough evenly, then sprinkle cinnamon sugar over the top
  • Using your palm, press the sugar into the dough gently.
  • Roll up the dough at the longest side so that you end up with a long dough roll
  • Using a sharp knife cut dough into 16 pieces. Place pieces onto baking tray and bake for 10-15 mins or until lightly golden underneath.
  • Whilst scrolls are baking, use a stick mixer to blend all icing ingredients together.
  • When scrolls have finished baking remove from oven
  • Put a teaspoon of icing on top of each scroll whilst they are still warm.
  • ENJOY!
