Breakfast, brunch, snack……whatever, these healthy french toast stacks are AMAZING! Thanks so much to Healthy Mummy reader Carley Mahr for sending us this yummy recipe. If you’re wanting something a little bit more special for breakfast this weekend that is still keeping in check with your healthy eating plan, then this is definitely it.
Ingredients
- Bread of choice ( I used 2 slices of organic ancient grain & seed roll)
- 50g banana sliced
- 1 tbs blueberries
- 5 large raspberries
- 1 large egg white
- 2.5 ml pure maple syrup
- 1/4 tbs coconut oil
- 3/4 tbs Heathy mummy Vanilla smoothie mix
Method
- Heat the coconut oil in a fry pan.
- Slice the bread and soak in egg white.
- Place the bread into the pan & evenly spread the healthy Mummy Smoothi over the top of the bread & rub in remaining egg white over the top. (this prevents the protein powder from sticking to the pan once flipped over).
- Once cooked on the bottom side, flip over & cook the other side.
- Once cooked remove from heat, & place sliced banana on the bread, and layer with blueberries & raspberries as you wish.
- Drizzle maple syrup over the top of your stack.
