Winter has well and truly set-in for those of us in the southern hemisphere, and this is the time when nasty cold and flu symptoms are doing the rounds. And when you’re feeling under the weather, the last thing you feel like doing is sticking to a healthy routine – you tend to crave all the comfort foods that you’ve been working so hard to avoid, and it can throw weight loss off-track. But when you’ve got a healthy recipe on hand that not only ticks the boxes for soothing the winter blues, and is also perfect to use on one of the Lose Baby Weight plans, then you’ll be keeping your energy levels up at the same time as maintaining weight loss.

So today’s instagram winner is Dương Nguyễn (@bocau4mat) – her divine Vietnamese Chicken Pho is one of those heart-warming but light soups that keeps you full as it’s high in protein, at the same time as being low fat and packed with nutrition. To make your own healthy chicken pho, you could go all-out and make your chicken stock from scratch, but we prefer to leave that one to the professionals – there’s some great pre-made liquid stocks available in the supermarkets which will save you precious time in the preparation and turn this dish into a quick and easy meal. Aside from 1 litre of stock, you’ll need a thumb-sized piece of ginger, 2 star anise, 1 tbsp fish sauce and 2 tbsp soy sauce, rice noodles, 1 cup cooked sliced chicken breast, 1 cup fresh coriander, 1 cup beansprouts, 2 small fresh red chillies (thinly sliced), 3 green onions (thinly sliced) and some fresh lime wedges.
Simply boil together your stock, ginger, star anise, fish sauce and soy sauce with 2 cups of cold water and simmer for 10 minutes. Add your noodles to a separate heatproof bowl and cover with boiling water for 5 minutes. Drain well once they’ve gone tender. Remove the star anise and ginger from the stock using a slotted spoon, and add a squeeze of lime. Add your noodles to a serving bowl and top with your chicken. Pour over the soup, and top with fresh coriander, chilli, beansprouts, onion and another squeeze of lime. Delicious!
