Losing baby weight can be a big challenge unless you have a great range of healthy recipes on hand to keep you on track and make sure you’re getting the right nutrition to keep you energised and motivated towards achieving your goal weight. And today’s winning instagram from @clairekerr06 is a healthy recipe for sweet potato soup – a great meal to use on one of our Lose Baby Weight plans. 
Packed full of vitamin B6, vitamin C, iron and magnesium, sweet potatoes are a powerhouse of nutrition. They are also low GI, which means they keep your blood sugar constant, and are a really great vegetable to use as a staple in place of normal potatoes. To make your own sweet potato soup, simply cook off a selection of vegetables as a base (onions, celery and carrots are a good option), and then add a kilo of diced sweet potato to the pan with five cups of stock (chicken stock is great for flavour, but opt for vegetable stock if you’re a non-meat eater). Simmer for about half an hour, or until the sweet potato has softened sufficiently. Remove from the heat and leave it to cool, before blending with a stick blender. To serve, simply bring to the boil, and add a sprinkling of fresh basil and maybe even a tiny dash of cream.
